Diabetic Meals

Diabetics are being offered more and more tasty foods as people come up with sparkling new dishes that will satisfy anyone’s taste. One such dish is named the ‘Spicy Chicken Breasts.’ This dish requires 15 minutes of prep time followed by 15 minutes of cooking time for an easy 30 minute meal.

The ingredients for the chicken breasts calls for 2 1/2 tablespoons of paprika; 2 tablespoons of garlic powder; 1 tablespoon of salt; 1 tablespoon of onion power; 1 tablespoon of dried thyme; 1 tablespoon of ground cayenne pepper; 1 tablespoon of ground black pepper; 4 skinless, bonless chicken breast halves. You will need a medium bowl in which you will mix the paprika, garlic powder, salt, onion powder, thyme, cayenne pepper, and ground black pepper.

After mixing these together you will set aside three tablespoons of the seasoning. The remainder can be refrigerated for later use on fish, vegetables, or other selections.

After the ingredients have been prepared you will preheat the grill to a medium-high heat. Take some of the seasoning and rub it onto both sides of the chicken breasts. After you lightly oil the grill grate you can place the chicken on the grill. Cook the breasts for about six to eight minutes on each side. Once the juices run clear you can remove them from the grill and they are ready to eat.

You can add a tasty vegetable to join with the chicken by preparing ears of corn. One recipe calls for a quart of beer along with ice cubes and the number of ears of corn you want to prepare. First you will place the corn, with husks, in an ice chest. Next, pur the beer over the top. Finally, dump the ice out over the ears of corn. Place the lid on the cooler. You can let the corn sit overnight or for at least eight hours. The next step requires a preheated smoker set to 250 degrees. You will place the corn in the smoker and close the lid. The corn needs to cook for one or two hours. You need to turn the corn every 20 minutes. When the corn is done the kernels will give easily under pressure. The nifty thing about this is you can peel back the husks, when you are ready to eat the corn, and these will act as handles.

Now that you have your chicken and corn you might want to add a salad. A delicious choice is the ‘Easy Mock Risotto.’ This goes particularly well with chicken. The ingredients call for 2 tablespoons of extra-virgin olive oil; 2 cloves garlic, minced; 1/2 small onion, finely chopped; 2 (14 ounce) cans chicken broth; 2 cups uncooked orzo pasta; salt and pepper to your own taste. The cooking time is about 20 minutes.

First, you need to heat a saucepan over medium heat. When it is fully heated you can add the olive oil. Follow this with the garlic and onion; cook and stir until tender (about three minutes). Next, pour in the chicken broth. Stir to loosen any pits from the bottom of the pan. When the broth begins to boil it is time to stir in the orzo pasta. Now it is time to reduce the heat to low. You can cover the pan and allow the contents to simmer for 15 minutes (or until the pasta has absorbed all of the liquid). During the process you should stir the contents occasionally so it will not stick. This is particularly true as you near the end of the cooking process. Once completed you can season with salt and pepper before serving.

Once you complete your delicious meal you might want some desert. Who says a diabetic cannot have desert? Tonight you are going to enjoy some apple raisin cakes. They require about ten minutes for preparation and the cooking time is just seven minutes. Your ingredients consist of 2 beaten eggs; 1 cup applesauce; 1 teaspoon ground cinnamon; 2 teaspons white sugar; 1 cup all-purpose flower; 1/2 cup whole wheat flour; 2 tablespoons baking powder; 2 teaspons vanilla extract; 1/2 cup raisins.

Combine the eggs, applesauce, cinnamon, sugar, flour, baking powder, vanilla, and raisins in a large mixing bowl. After the mixture has been blended form small cakes from the batter. Next, heat a nonstick griddle over medium heat. You will fry the cakes until both sides are browned (about five to seven minutes).     I am relocating soon and will be staying with a friend for a few months, who has diabetes, but does not take care of herself. It is my goal while I am there to have her eat right so I am in need of recipes, and portion sizes. I plan to have her atleast take walks for excersize after meals and perhaps before them too. She needs to see that you "can live" with diabetes and still enjoy "what" you're eating. Thank you. Toni

    I was told am type2 for the first time .I need some help on what I can eat. I can't have any sweets,breads no cooking oil except pam spray. no cokes,butter, popcorn. it was way of wack the dr, told me.Ihave to bring it wqy down in four weeks. So is there agood meal planner I can go by?

    Why do so many sites SAY they are about menu and meal planning, and then are about something else entirely? It is very frustrating.

    Elsie The RN it is confussing when you don,t know where to go or who to ask and like the 0ne said all advertizment or want to sell a plan to you is all these sight are about. You don,t find out food you can eat & food you can,t. My Dr said no sweet stuff no fried food . I need top know what food turns to sugar after you eat it, beside corn

    I,m going to try to help some of you ,that have problem trying to find out what you can eat.The thing I have found out is .NO PROCESS FOOD. You have to cook your food like grandma use to cook. If it want rot down eat it. It true you will waste a lot of food ,by having to through it out ,cause it want keep to long in you ref. so the best is not buy to much at a time. I have been having problems with my sugar to and the Dr said I had to go on a diet, When you read lables you find there is sugar in about every thing you buy but when you cook your food you can stop that. I,v did alot of reading and saw a lot of talk shows , Dr Ozz, the Doctors,early show and oprah and what I have found is,and it,s working for me,my sugar has been around 120 every morning for a week now. A person need 75% carbs 15% proten 10% fat you need fiber and whole grain. Everybody is different so you have to have to find out what work,s for you. But I can tell you this stop the pototoes except sweet you can have them. Stop the cokes any kind diet or reg,stop the tea or if you do with no sugar and green tea is best of course no sugar,stop the white bread eat wheat bread and only one slice at a time if possible,no fried food eather bake broil or boil or grill.Use your head ,you can steam fry like use 1 to 2 tablespoon of canola oil or olive oil.turn your buner down and put a lid on it.buy fresh veg.or frozen ones they have no perserves in them and most emportant read lables. If you sugar drops during the day I use 1 gram craker and 1 tablespoon of peanut butter or about 4 rite crakers with a slice of cheese or 15 apple. People this is working for me.You can eat a lot of normany stuff but small amount.black eyes peas,beans,cabbage tomatoes lettuce, carrots,broccoli,califlower,beets, I use a lot of stir fry.you can even eat corn but like once every 2 weeks and only like a couple of tablespoon fulls.eat corn bread no sugar in it and only a small piece, pizza one wedge that,s all. You don,t have to starve to death.Yes eat that keeps your sugar down specially breakfast.Also if you have to have sugar and you will from time to time use splenda it,s great, works just like regular sugar, but cost is quite high.And yes A turkey sandwish is fine on wheat bread 1 Tablespoon of miracle whip lettuce and tomatoe and couple slices of shave turkey taste great and want hurt you or it didn,t me. well I hope I have helped some one.This is the kind of help I wanted and didn,t get it .I had to do research my self.Have a good day and good luck to every one
